Here I share gluten free flour recipes which one is whole grain the other is white gluten free flour. In my previous post ‘Refined vs Whole grains‘ , i mentioned that what makes grain as a whole. In these recipes, to make whole grain flour, teff and millet are used. Briefly, i wanna summarize teff and millet.
What are they ?
Teff has a very high calcium content high in protein, fiber, phosphorus, magnesium, aluminum, iron, copper, zinc, boron, barium, and thiamin. The grains of teff are very small which mean it needs less fuel to cook.
What is millet ?
Millet is alkaline forming grain and excellent source B vitamins ,magnesiums and antioxidants. It has high content fiber and rich in proteins. Easily can be cooked and digestable.
